Sandwich with Pork Luncheon Meatand baked vegetables

Ingredients

  • 340 g Tulip Pork Luncheon Meat
  • 1 Eggplant
  • 1 Red bell pepper
  • 1 Onion
  • 1 Zucchini
  • 1 Tomato
  • Bread
  • Extra virgin olive oil
  • Salt

Instructions

Chop the vegetables in large slices and place on a large baking tray. Drizzle with some extra virgin olive oil and add salt. Bake at 350 °F / 180 °C for 20 minutes. 

Cut the Pork Luncheon Meat in 9x2 cm. strips. Then fry in a skillet until brown and crisp. 

Finally, place the fried Pork Luncheon Meat and the baked vegetables on some bread of your choice.
